The Farm
Il Rigo has been a certified organic farm since 1990.
We grow organic heirloom grains and legumes in seasonal rotation.
From our grains, we produce our own stone milled flour, which is used in the kitchen to prepare breads, cakes and pasta.
We also have a small production of olives.
The extra virgin olive oil is cold pressed in our old, local stone olive mill.

Handmade Jams
At breakfast we serve our homemade jams, prepared with fruit from our orchard.
We slow-cook the jams, like our ancestors used to do, adding only a little sugar and without using any chemical thickeners.
We also prepare chutneys with vegetables from the garden: a perfect pairing for the sheep cheese from Pienza!

Hairloom Grains
At Rigo we grow hairloom grains, in rotation with legumes that naturally enrich the soil.
Our flour is stone milled, retaining its natural flavor and its nutritional value.
The flour is then used for all the bread, pizzas, cakes and biscuits that you enjoy at our table.

Flowers of il Rigo
We’ve recently started a small production of cut flowers that we grow in our vegetable garden.
The tough conditions of our clay-rich soil, exposed to strong winds, make this task very rigorous.
That’s why we select drought-tolerant annual varieties and many wild flower varieties, from which we collect the seeds.
Our flowers then serve as decorations for the tables and living rooms of Il Rigo, and for our intimate weddings. They add a unique and personal touch to our celebrations!
